Classic Westfalian "Struven"

Ingredients (12 - 15 pieces)

  • 750 ml Happea Barista
  • 500 grams of rosines
  • 1 kg flour
  • 80 gram yeast
  • 4 tablespoon sugar
  • 240 gram plant based yellow egg alternative (Tip: Mung bean)
  • 1 teaspoon salt
  • Oil for baking
  • Cinnamon, sugar and/or apple puree

Method

  • Mix in a bowl Happea Barista, flour, yeast, sugar, plant based egg replacement as wells salt to a yeast dough
  • Put kitchen towl on top of the bowl and let it rest for 20 minutes
  • Mix in the rosines
  • Heat up oil for baking temperature
  • Use a tablespoon and put small portions (cookie size) into the oil and bake to struven
  • Put the cooked struven on a plate and by own choice add sugar, cinnamon and/or apple puree on top
